One, is the long shelf life of milk too much preservative added?
Frequent drinkers of milk must know that some milk has a shelf life of only 7 days, while some can go up to 6 months. This makes you a little concerned about whether the milk with a long shelf life has a longer date because of the added preservatives.
The shelf life of milk is actually related to the way it is sterilized and packaged, and there are two common ways to sterilize milk.
One is pasteurization.
One is the pasteurization method, which kills pathogenic bacteria in the milk at a low temperature of 60-85°C. This low-temperature sterilization method can maximize the retention of nutrients in the milk, but the downside is that the shelf life is short, usually only a few days, and requires cold chain transportation.
The second is ultra-high temperature sterilization. This method instantly heats the milk to 135-150°C for 2-6 seconds, which kills the bacteria within the milk while keeping it shelf life ranging from 6 to 12 months, or it can be stored at room temperature.
So which is better, pasteurized milk or room temperature milk?
Pasteurization is slightly better in terms of both nutrition and taste. It is a good way to keep the flavor of the milk better, because the temperature of the sterilization is lower and more nutrients are preserved, and the loss of volatile, low-content flavors is reduced.
It is important to note that milk should be consumed as soon as possible within 24 hours of opening and not left for long periods of time.
The more milk you drink, the higher the risk of cancer?
In recent years, there have been many rumors about milk, and even claims that drinking too much milk can cause cancer.
In May 2022, an 11-year study involving more than 500,000 people in China, conducted jointly by the University of Oxford, Peking University and the Chinese Academy of Medical Sciences, showed that consuming 50g more milk per day increased the overall risk of cancer by 9% compared to subjects who almost never drank milk.
But the study is somewhat flawed in that it was conducted between 2004 and 2008, a period of rapid economic development in China and major changes in people's lifestyles that may also affect cancer risk, and it is not clear whether there is a difference between the dairy products used in the study and other dairy products.
Likewise, researchers at Loma Linda University School of Medicine followed 28737 cancer-free men for 7.8 years and found that men with higher intakes had a significantly higher risk of prostate cancer compared to subjects with low dairy intakes.
A total of 1254 subjects developed new prostate cancer during the follow-up period. A comparison showed that subjects who consumed 430 g of dairy products per day had a 26-27% increased risk of prostate cancer compared to those who consumed only 20.2 g of dairy products per day.
But drinking milk and the risk of prostate cancer are not positively correlated; drinking 50g of milk per day led to a significant increase in the risk of prostate cancer. However, the difference in risk of prostate cancer was not significant in subjects who drank 150 and 300 g per day.
After ruling out the risk of cancer from elements such as fat and calcium in the milk species, the researchers suspect that the sex hormone content of milk is responsible, but the mechanism of action is not yet clear.
So for the nation, can we still drink milk? That is certainly possible. According to our dietary guidelines, adults should consume 300-500ml of milk or related dairy products daily, as recommended by our dietary guidelines.
